Bun Ca (Boon Ka) – Fish soup with thin vermicelli noodle. The Ban Beo (Bun Bail) is also good here – a delicious appetizer served in individual little dishes of fresh shredded shrimp, fried shallots and green onion on top of a sticky rice pasta.
Cam dap suon ram (Gum Dup Soong Raahm) is also good – pork short ribs in glazed caramel sauce with pan-fried white rice – com dap – if you like rice sticking to your teeth you can order it with the plain rice.

At Ngu Binh (Goo Bin), ask for the non-spicy version of Bun Bo Hue (Boon Baw Way). They put in way too much hot pepper flakes. You can always add more hot sauce from the condiments on the table. The Mi Quang (Me Kwan) is also good at Ngu Binh – a yellow noodle dish with pork.
Bun Bo Hue (Boon Baw Way) – translates literally to Noodle Beef of the Hue region in Vietnam. This bowl of spicy soup is similar to a hearty bowl of the American beef stew except it is spicy and the medium round noodles are like spaghetti noodles. The “vegetables” are actually herbs like mint, bean sprouts, shredded banana plant leaves. There are pigs feet and fatty cuts of beef, cubed solidified blood, it tastes delicious but probably quite fattening.
